10 - 1 teaspoon coconut oil or vegetable shortening (optional)
# Directions:
01 - Preheat oven to 350°F and line a baking sheet with parchment paper.
02 - Whisk together flour, baking powder, and salt in a small bowl; set aside.
03 - In a large bowl, beat the softened butter and sugar together until light and fluffy.
04 - Add egg, milk, and vanilla extract to the butter mixture and mix until fully combined.
05 - Gradually mix the dry ingredients into the wet mixture until just incorporated.
06 - Drop teaspoon-sized mounds of dough onto the prepared sheet, leaving 2 inches between each.
07 - Bake for 12 to 15 minutes until edges are lightly golden; cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
08 - In a microwave-safe bowl, heat chocolate and optional coconut oil in 20-second intervals, stirring until smooth.
09 - Dip half of each cooled cookie into the melted chocolate, allowing excess to drip off; place on parchment to set. Refrigerate for 10 minutes to harden if desired.
