# Directions:
- Heat olive oil in a large pot over medium heat. Add ground beef and cook for 5 to 6 minutes, breaking it apart until browned. Drain excess fat if necessary.
- Add diced onion and minced garlic to the pot and cook for 2 to 3 minutes until fragrant.
- Stir in chopped cabbage, sliced carrots, and diced bell pepper. Cook, stirring occasionally, for 4 to 5 minutes until slightly softened.
- Pour in diced tomatoes, beef broth, and tomato sauce. Add dried oregano, dried thyme, and bay leaf. Bring the mixture to a gentle simmer.
- Stir in uncooked white rice. Season with salt and black pepper to taste. Cover and simmer for 25 to 30 minutes until rice and vegetables are tender.
- Preheat the oven broiler. Combine softened butter with minced garlic, chopped parsley, and a pinch of salt.
- Spread the garlic butter mixture evenly on bread slices. Place on a baking sheet and broil for 2 to 3 minutes until golden and crispy.
- Remove the bay leaf from the soup. Ladle soup into bowls, garnish with fresh parsley, and serve alongside the garlic toast.
